Easy Dinner Recipe Cheesy Jack Mac

New! Feed me Fridays! I will be sharing my own recipe creations that will please your entire family!

I created this dish as a sort of grown up mac-n-cheese. As much as I love those little Spongebob shaped noodles, the flavor in the Kraft box was just not cutting it for me anymore!
2 boneless skinless chicken breasts

1 16oz box penne noodles
1 8oz bag Monterey Jack cheese
1 8oz block pepper jack cheese (optional)

1 ream ritz crackers
1 16oz jar Alfredo sauce
1 14.5 oz can of Italian style tomatoes (drained)

1 4oz can mushrooms (drained)

1 small onion (sliced)

2 Tbs. Olive oil

1. Boil the chicken breasts until tender and falling apart.
2. Shred the chicken into small pieces.

3. Begin boiling noodles according to package directions. Remove and drain about 5 minutes before they are completely finished. You want them just a little undone.

4. Put the olive oil in a pan to saute your mushrooms and sliced onions.
5. Pre-heat oven to 350 degrees.

6. Use a deep baking dish and poor in your chicken, cooked noodles, sauted mushrooms/onions, 1/2 can of tomatoes, 1/2 bag of monterey Jack cheese, and alfredo sauce. Also if you opted to add the pepper jack cheese then shred half of the block and add it at this time.
7. Mix well.
8. Sprinkle remainder of cheese on top.
9. Break up a few Ritz crackers evenly on top.
10. Bake in the oven for about 15 minutes, or until cheese is melted.
